Mom’s Meatloaf

Do you have a favorite nostalgic meal? I do and it’s my mom’s meatloaf. It’s the meal my mom would make when I was coming home to visit. My favorite sides to pair it with are my best friend, Hayley’s peas + mashed potatoes. When Hayley and I were in college and lived together she would make me peas. Nothing fancy, just canned peas with a glob of butter but oh man she made me a pea lover after that! It’s one of those feel good meals you prepare from memory and makes you feel warm inside.


Meatloaf Recipe:

  • 1-2 pounds ground beef
  • 1 small yellow onion chopped finely
  • 1 egg
  • 1 cup oats
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp parsley
  • 1 tsp basil
  • 1 tsp oregano
  • 1 tsp salt
  • 1 tsp ground black pepper

Preheat over to 350 Degrees F. Combine all ingredients together in a large bowl until all ingredients are mixed together. I use my hands but you can use a spatula if you prefer. Once all ingredients are combined, pack meat into loaf pan and cook for about 60 minutes or until the internal temperature reaches 160 degrees F.
