Chocolate M&M Zucchini Bread

Looking for a way to sneak veggies in your kids diet? Let me introduce you to chocolate M&M zucchini bread! This loaf has an entire zucchini in it and you’d never know it! I added mini M&M’s to the recipe for the kids but I prefer it with milk chocolate chips. You can add white chocolate, butterscotch or heath chips to this recipe or simply go without the added extra!



  • 1 cup all-purpose flour
  • 1/2 cup unsweetened cocoa
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 large eggs (at room temperature)
  • 1/4 cup unsalted butter (melted slightly)
  • 1/4 cup vegetable oil
  • 3/4 cup light brown sugar packed
  • 1 teaspoon pure vanilla extract
  • 1 1/2 cups packed shredded zucchini (about 1 whole zucchini)
  • 1 cup mini M&M’s

Preheat oven to 350 degrees F. Grease loaf pan with nonstick cooking spray.

In a medium bowl whisk together flour, cocoa powder, baking soda and salt. Set aside.

In a large bowl add the eggs, melted butter, vegetable oil, vanilla extract, and brown sugar. Stir until smooth.

Add the dry ingredients to the wet ingredients and mix. Add the shredded zucchini until well combined. Add 3/4 of the mini M&M’s and combine. Pour batter into loaf pan and sprinkle the top with the remaining 1/4 mini M&M’s. Bake for 50-60 minutes. Cool on bakers rack and enjoy!
