Banana Bread

I’ve been making this recipe for years. It’s fool proof and so good I even shared it with my Mother in Law. You can add chocolate chips or nuts to this recipe if you’d like. I made the original version here.

After the bread cools for a few minutes I like to cut a slice and slather a thin layer of butter on top while it’s still warm and drink a cup of coffee with it. I normally try to make the bread at nap time so I can enjoy my coffee hot 😉.

3 Ripe Bananas
1/2 cup vegetable oil
1 egg
1/2 teaspoon vanilla extract
1 cup sugar
2 cup flour
1 teaspoon baking soda
2 teaspoons milk
1/4 teaspoon salt

Variations / add – ins:
1 cup chopped walnuts
1 cup chopped pecans
1 cup chocolate chips

Preheat oven to 325. Mash bananas with fork in mixing bowl, add sugar, oil, egg, vanilla, and milk. Use hand held mixer to mix together. Next add the flour, baking soda and salt. Mix together until blended. Spray loaf pan with cooking spray then pour mixture into pan. Bake for 45 – 60 minutes (I bake mine for 60 minutes in my oven). Insert knife into middle of bread to see if it’s done. The knife should come out clean. To cool, remove from pan and set on a bakers rack. Enjoy!
